Tomato Soup Recipe
Tomato soup is a year round staple in our household. I make this recipe at least once a month, sometimes more.
Ingredients
- Roma tomatoes
- Cherry tomatoes
- Tomato paste
- Yellow onion
- Garlic
- Parmesan cheese
- Heavy whipping cream
- Honey
- Basil
- Broth
Instructions
Rinse tomatoes and place in a dutch oven (favorite one linked here https://amzn.to/3WdyaUn). Place dutch oven in oven on 400 degrees for about 45 minutes, take out and place on stove top on medium. Separately, dice and cook yellow onion and then add in garlic, simmer and add tomato paste. Add cooked onion, garlic, and tomato paste into dutch oven, add broth and bring to a simmer for about 20 minutes. Add honey (or sugar) and heavy whipping cream and blend with an immersion blender (favorite on linked here https://amzn.to/3RZbbdb). Top with basil and parmesan. Enjoy!
